When I came across canned, organic, white beans, I realized I had not made Fagioli e Pasta in over a year. This simple recipe has less than 500 calories per serving while providing 10 grams of fiber and 28 grams of protein.

I used homemade tomato sauce, but you can use prepared tomato sauce. Depending on how quickly your stove heats water, you can make Fagioli e Pasta in 20 minutes or less.

All you need are three ingredients:

  • Prepared tomato sauce (homemade or jar)
  • 1 or 2 cans of low sodium white beans
  • 6 to 8 oz. of pasta

With these three ingredients you can have a delicious, homemade meal superior to and healthier than most frozen pasta entrees.

Vegetarian Fagioli e Pasta

Using meat sauce is optional. For vegetarian Fagioli e Pasta use meatless homemade or prepared tomato sauce. You can add a second can of beans if desired.

Cook’s Tip

Place sauce and drained beans in a microwave proof serving bowl. Heat 5 to 6 minutes on medium power or until heated trough (temperature 160°F (71°C) or higher.

Add the cooked pasta to the bowl, stir, and serve.

Ingredients

  • 15 oz. (425 g) canned low sodium white beans
  • 2 cups (470 g) homemade or prepared tomato sauce
  • 6 oz. (170 g) elbow macaroni or other small pasta

Method of Preparation

Step 1

In a 3-4 qt/L pan, bring 2 or more quarts of water to a rolling boil. Cook pasta per manufacturers directions until al dente.

Step 2

Meanwhile, drain and rinse beans. In a 2 qt/L pan, combine beans and sauce and bring to a boil over medium heat. Reduce heat to low, and simmer 8 to 10 minutes or until heated through.

Step 3

Drain pasta and combine with bean sauce in a large mixing bowl. Serve immediately.
