Whether to must eat a gluten-free diet or prefer a gluten-free diet, this easy recipe allows you to enjoy crispy fried fish without gluten. Whole grain corn meal replaces refined white flour. Corn starch helps crisp the fillets.

Fish fillets 1-inch (2.5 cm) thick or less only takes minutes to cook until flakey. Overcooking produces dry, chewy fish fillets.
Ingredients
- 2 6-oz. (170 g) fish fillets about 3/4 inch (2 cm) thick
- 1 tablespoon (15 ml) corn starch
- 2 tablespoons (30 ml) corn meal (white or yellow)
- 1/4 teaspoon (1.25 ml) salt or to taste
- Ground black pepper to taste
- 1 tablespoon (30 ml) vegetable oil
Method of Preparation
Step 1
Place oil in a large skillet and heat on medium to medium-high heat to about 370°F (190°C). Meanwhile, place dry ingredients in a plastic bag and shake to combine. Add the fish fillets and gently shake to coat.
Step 2
Add breaded fillets to hot oil, cover and fry 3 to 4 minutes. Uncover, turn fillets over, cover and fry another 3 to 4 minutes or until fish flakes easily with a fork. Cool 2 to 3 minutes and serve.
