Whether to must eat a gluten-free diet or prefer a gluten-free diet, this easy recipe allows you to enjoy crispy fried fish without gluten. Whole grain corn meal replaces refined white flour. Corn starch helps crisp the fillets.

Cook’s Tip

Fish fillets 1-inch (2.5 cm) thick or less only takes minutes to cook until flakey. Overcooking produces dry, chewy fish fillets.

Ingredients

  • 2 6-oz. (170 g) fish fillets about 3/4 inch (2 cm) thick
  • 1 tablespoon (15 ml) corn starch
  • 2 tablespoons (30 ml) corn meal (white or yellow)
  • 1/4 teaspoon (1.25 ml) salt or to taste
  • Ground black pepper to taste
  • 1 tablespoon (30 ml) vegetable oil

Method of Preparation

Step 1

Place oil in a large skillet and heat on medium to medium-high heat to about 370°F (190°C). Meanwhile, place dry ingredients in a plastic bag and shake to combine. Add the fish fillets and gently shake to coat.

Step 2

Add breaded fillets to hot oil, cover and fry 3 to 4 minutes. Uncover, turn fillets over, cover and fry another 3 to 4 minutes or until fish flakes easily with a fork. Cool 2 to 3 minutes and serve.
