Slow Cooker Chuck Roast is an economical meal for 4 to 6 people. The main ingredients are a chuck roast, potatoes, carrots, and onion. Season with a salt, pepper, and a sprig of rosemary (optional) and you have a family meal for a fraction of the cost of dinning out and without additives and preservative in frozen meals.
To make cooking even simpler, you can add all ingredients to the slow cooker the night before, refrigerate, and have it cook your meal the next day while you are at work or doing other activities.
There are no worries about temperature settings, sticking, or burning. And, clean up is easy.
Cooking times will vary depending on the size of your roast. Allow at least 6 hours on high and 12 or more hours on low.

- 2.5 to 3 lb (1130 to 1350 g)
- 6 small potatoes (about 28 oz, 800 g), cut in half
- 8 oz. (225 g) carrots, peeled and cut
- 1/2 (140 g) small onion, thinly sliced
- 1/2 cup (120 ml) dry white or red wine, water, or broth
- Kosher salt to taste
- Black pepper to taste
- Red pepper flakes (optional)
- Sprig of rosemary or 1 tsp (5 ml) dried (optional)
Method of Preparation
Step 1
Cut small potatoes in half and larger potatoes into 4 to 6 pieces. Arrange in bottom of slow cooker. Season potatoes with salt and pepper. Cut whole carrots into uniform lengths (about 3", 7 cm). Arrange over potatoes followed by the sliced onion. Add wine or other liquid.
Step 2
Place chick roast in slow cooker and season with salt and pepper. Lay rosemary sprig on top or sprinkle with dried rosemary.
Step 3
Cover and set slow cooker for high (5 to 6 hours cooking time) or low for all day cooking. Check roast after minimum cooking time. Meat will easily separate and shredded when pierced with a fork.
