Southern Italian cooking is simple, rustic home cooking. When using high quality ingredients, it does not take a lot to make a quick home meal.

Pasta with butter and cheese is another version of Pasta Bianco (White Pasta). It is a simple recipe that has been around for 100s of years, and when made with macaroni is the original of mac and cheese. The differences between Pasta with Butter and Cheese and Mac and cheese, is that it doesn’t require a sauce and it is not yellow.

Boxed Mac and Cheese may be convent, but the popular versions sold in the United States use artificial yellow food coloring instead of more expensive natural coloring.

You can use this basic recipe to create dozens of variations by adding your favorite vegetables, diced cooked chicken or fish, red pepper flakes for heat, black or Mediterranean olives as shown in the photos.

 

Ingredients

  • 12 oz. (340 g) long or short pasta
  • 1-2 teaspoons (5-10 ml) kosher salt
  • 4 tablespoons (56 g) butter or margarine
  • 1/4 - 1/3 cup (60-80 ml) reserved pasta cooking water
  • 8 tablespoons (50 g) grated parmesan or Romano cheese
  • 1-2 tablespoons (15-30 ml) minced Italian parsley for garnish (optional)

Method of Preparation

Step 1

In a 3-4 qt/L pan bring at least 2 qts/L of water to a rapid boil. Add salt if desired and pasta. Cook pasta per package directions until al dente. Drain and reserve 1/4 to 1/3 cup of the cooking water.

Step 2

In a large bowl, add the butter and reserved liquid. Add the drained pasta and toss to coat with butter. Sprinkle with 2 to 4 tablespoons of cheese and toss to coat.

Step 3

Serve with remaining cheese on the side. Garnish with parsley if desired. Serve immediately
