Leafy greens, like spinach, are often labeled superfoods due to the abundance of nutrients, and low calories.

Sautéed Spinach is a simple recipe to prepare spinach or any left green in only minutes.

You can doubled or tripled the amount of spinach or greens. The only limit is the size of your pan. What appears like an abundance of greens soon wilts down to a small fraction of its original bulk.

For a 8 or more cups of greens, increase oil to 2 tablespoons (30 ml) and garlic to 3 or 4 cloves or to taste. Regardless of the amount of greens, adjust the amount of garlic to your taste. Garlic cloves vary in size, so experiment until you find the amount that suites your taste. You can also omit the garlic if required.

Ingredients

  • 4 cups (120 g) packed spinach, washed, trimmed and drained
  • 1-2 garlic cloves, minced or sliced
  • 1 tablespoon (15 ml) extra virgin olive oil
  • Season with salt and pepper if desired

Method of Preparation

Step 1

Heat oil in a large skillet or wok over low high heat and add the garlic. Cook on low heat about 5 minutes stirring occasionally. Remove pan from heat if garlic begins to brown or burn.

Step 2

Add spinach and cook over low heat 6 to 8 minutes, stirring constantly, until all leaves are wilted and spinach is the desired texture.

Step 3

Season to taste.
