Mashed Sweet Potatoes is an alternative to traditional mashed potatoes or candied yams.
Sweet potatoes and yams have more nutrients, and are higher in fiber and calories compared to russet and other white potatoes. A one cup serving has about 100 more calories than a cup of mashed russet potatoes, but significantly less sodium.
- You can reheat and use left over baked candied yams for this recipe.
- Adjust the amount of sugar to taste.
- 2 lbs (900 g) sweet potatoes or yams
- 3 tablespoons (45 ml) packed brown sugar
- 2 tablespoons (30 ml) butter or margarine
Method of Preparation
Bake potatoes at 400°F (205°C) for 60 minutes or peel, cut into chunks, place in a pan, cover with water and boil 20 to 30 minutes or until easily pierced with a knife or fork.
Place the cooked potatoes in a medium bowl and mash using the back of a spoon, potato masher or whip using a hand mixer until smooth.
Add sugar and butter adjusting the amount to taste. Stir or beat until well combined. Serve.
