Self-rising cornmeal is been a common ingredient in the southeastern United States for many decades. 

It is usually used to may cornbread and corn muffins.

Since baking powder and salt are already in the flour, they are omitted in recipes. The only other ingredients needed are milk/water, eggs, and fat.

The addition of baking powder reduces the shelf-life of self-rising cornmeal. If you only make a cornbread occasionally, it is more economical to make your.

Ingredients

  • 1 cup (140 g) white or yellow cornmeal
  • 1/3 cup ( 40 g) all-purpose flour
  • 2 teaspoons (10 ml) baking powder
  • 1/2 teaspoon (2.5 ml) salt (optional)
