This 5-Minute Graham Cracker Pudding Cake recipe goes back to my childhood. My father made this loaf cake. So this recipe is over 50 years old. Its origin is unknown, and an Internet search turned up one similar recipe that included cream cheese and whipping cream. It is similar to s’mores omitting the marshmallows. If desired, you can top the cake with miniature marshmallows

5-Minute Graham Cracker Pudding Cake is so simple a child can make it. Always supervision children if they are trimming graham crackers to fit the pan.

Cook’s Tip

Like Tiramisu made with dried ladyfingers, the graham crackers will absorb moisture from the pudding and soften. Refrigerate at least 4 hours or overnight before serving, and use within 4 days to prevent the cake from becoming too soggy.

Most loaf pans have angled sides and are wider at the top than the bottom. It may be necessary to trim the first and second layer of crackers to fit the pan. As you build up your cake, a gap will form between the full and half crackers across the width of the pan. You can let the gaps fill with pudding or trim the crackers to fit the pan. Trimming your crackers to fit adds a few more calories per serving.

Instant pudding sets up very fast. If you trim your crackers to fit the width of your pan, do so before building up the cake will make assembly easier. Crackers were not trimmed to width for the cakes pictured.

Substitutions

You can substitute 2 cups (500 ml) of cold homemade pudding for instant pudding. Always use cold pudding to precent the cake from becoming soggy.

You can use any flavor pudding and graham crackers.

Ingredients

  • About 1 1/2 packages (13 crackers, 215 g) graham crackers
  • 3.5 oz. (100 g) package instant pudding (any flavor)
  • 1 3/4 cups (420 ml) cold reduced fat (2%) milk

Method of Preparation

Step 1

Cover the bottom of the pan with graham crackers trimming the crackers if necessary. Prepare pudding per package directions using 1 3/4 cups of milk. Cover graham crackers with pudding (about 1/3 cup, 80 ml). Press the next layer of graham crackers into the pudding. Repeat with layers 2 through 6 covering the last layer of graham crackers with pudding. Trim crackers to fit your pan if desired. Use a spatula to evenly cover the last layer of crackers with pudding.

Cover pan with plastic wrap or aluminum, foil and refrigerate at least 4 hours.
