If you like lemons or limes, this simple Lemon Tea Bread is bursting with lemon flavor and perfect with tea or coffee.
Lemon Tea Bread is an easy sweet bread using grated lemon zest. The glaze is made using lemon juice adding more lemon flavor but glazing the bread is optional.
For Orange Tea Bread
Substitute orange zest and orange juice.
Lemon Tea bread can be frozen, whole or sliced, for up to six months. Tightly wrap in aluminum foil, plastic wrap and foil, or place in an airtight container.
Ingredients
- 1/2 cup (96 g) vegetable shortening
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1.5 cups (200 g) all-purpose flour
- 1.5 teaspoons (7.5 ml) baking powder
- 1/2 cup (120 ml) milk, whole or 2%
- Grated rind from one large lemon
- Glaze
- 1/2 cup (50 g) shifted powdered sugar
- 1 tablespoon (15 ml) lemon juice
Method of Preparation
Step 1
Place rack in center of oven and preheat to 350°F (175°C).
Step 2
In a small bowl, combine flour and baking powder.
Step 3
In a large bowl or stand mixer bowl, cream shortening and gradually add sugar beating on medium speed until light and fluffy. Add eggs one at at time, beating until well combined.
Step 4
Add one-third of the flour to the creamed mixture alternating with milk, beginning and ending with flour. Stir in lemon rind.
Step 5
Grease and flour, coat with cooking spray, or one with parchment paper a 9x5 inch loaf pan. Pour batter into pan and bake 50 to 55 minutes or until a wood toothpick or cake tester inserted into the middle comes out clean. Cool in pan 10 to 15 minutes, remove bread and cool completely on wire rack.
Step 6
If desired, make glaze by combining sugar and lemon juice until smooth and pour over bread. Allow glaze to harden (about 1 to 2 hours at room temperature) and serve.
