Easy Mushroom & Wine Gravy is a simple gravy you can make using wine or broth. Most of the wines’s alcohol evaporates during cooking leaving a wine flavored mushroom gravy.

Easy Mushroom & Wine Gravy goes well with poultry, fish, pork, beef or mashed potatoes. Wine or lemon juice retains the mushrooms white color. For a richer, darker gravy, substitute red wine.

Unlike mushroom gravy from a package, can, or jar, this recipe is packed with fresh mushroom, has no artificial ingredients or preservatives, and up to 80 percent less sodium. The flavor comes from fresh mushrooms, wine, herbs and a pinch of salt.

Cook’s Tip

When using only broth, stir 2 tablespoons (30 ml) of lemon juice into the mushrooms prior to adding the broth. The lemon juice’s acidity will help retain the mushrooms white color.

Substitution’s

Chicken or vegetable broth can be substituted for beef broth.

Ingredients

  • 8 (200 g) medium to large mushrooms
  • 1 tablespoon (15 ml) butter or margarine
  • 1/2 cup (120 ml) dry white wine or low-sodium beef broth
  • 2 tablespoons (30 ml) all-purpose flour
  • 1/2 cup (120 ml) low-sodium beef broth
  • 1/2 cup (120 ml) cold water
  • 1/8 teaspoon (1.25 ml) kosher salt
  • 1/8 teaspoon (1.25 ml) dried thyme or to taste
  • Fresh ground black pepper to taste

Method of Preparation

Step 1

Clean mushrooms, cut off stem ends and slice about 1/8 inch thick.

Step 2

In a 10-inch skillet or medium heat, melt butter. Add mushrooms when butter begins to sizzle. Sauté 1 to 2 minutes. Add wine, raise heat, and bring to a low boil. Cook 1 to 2 minutes to allow alcohol to cook off.

Step 3

Use a fork or whisk to combine flour and water until there are no lumps of flour. Add to skillet. Stir continuously until gravy thickens. Serve immediately.
