Ingredients

  • 2 tablespoons (30) extra virgin olive oil
  • 1 tablespoon (15 ml) red wine vinegar
  • 1 tablespoon (15 ml) garlic, minced
  • 1 tablespoon (15 ml) smoked or sweet paprika
  • 1/2 teaspoon (2.5 ml) dried oregano
  • 1/2 teaspoon (2.5 ml) ground corriander
  • 1/2 teaspoon (2.5 ml) ground cumin
  • 1/2 teaspoon (2.5 ml) kosher salt
  • 1 lb. (450 g) boneless, skinless, chicken breasts

Method of Preparation

Step 1

In a medium size bowl, stir or whisk all ingredients except the chicken. Slice the chicken breast into 1/2 to 1 inch wide strips or cubes. Add to spice mixture and stir to coat completely.

Step 2

Over medium heat, heat a large skillet until hot (3 to 5 minutes). Add the chicken in a single layer and cook 3 to 4 minutes per side or until cooked through.
