Southern Italian cooking is rustic, home cooking using simple, high quality ingredients.

At it’s simplest this recipe has 5 ingredients; vegetable, salt, olive oil, garlic, and black pepper. When make with green beans, it is a low calorie alternate to green bean casserole.

This simple Italian Style Vegetable recipe can be used to prepare and serve a variety of vegetables including leafy green vegetables like kale, spinach, and rapini.

Nutrition Information

Nutrition information varies with the type of vegetable used. One pound of spinach or other left green wilts to a fraction of its original bulk where as boiled asparagus, broccoli, and green beans retain most of their original weight.

The lower values are for leafy greens.

Ingredients

  • 1 lb. (450g) asparagus, green beans, Brussels sprouts, cauliflower, zucchini, or leafy greens
  • 1-2 garlic cloves, minced (optional)
  • 1-2 tablespoons (15-30 ml) Extra virgin olive oil
  • Kosher salt
  • Fresh ground black pepper

Method of Preparation

Step 1

Clean, trim, and slice vegetables. Bring about 2 qt/L of water in a 3 to 4 qt/L pan of water to a boil. Add about one teaspoon Kosher salt, stir, and add the vegetables. Cook 2 to 5 minutes or until desired texture.

Step 2

Drained vegetable and transfer to serving dish. Drizzle with olive oil and season with salt and pepper to taste. Sprinkle with garlic. Toss to coat and serve.
