Homemade Lentil Soup

Vegetable and legume soups are an excellent way of adding vegetables and fiber to our diet.

Lentil soup is higher in calories than vegetable soups. One cup (8 oz., 240ml) has about 200 calories versus 100 calories or less for vegetable soups. But lentils are high in protein and fiber. One cup and provides 10 grams of fiber that’s 40 percent of the daily recommendation of 25 grams of fiber. Increase the amount to a more generous two cups and you get 80 percent of your daily fiber in just one meal.
