Homemade Chinese Almond Cookies

Many recipes require blanched almonds (almonds without skin). You can buy blanched and toasted almonds or prepare them using this simple method.Step 1. Use a pan large enough to hold the almonds covered by at least two inches of water.

Step 2. Boil enough water to cover the almonds at a minimum of two inches (3 cm).

Step 3. Remove pan from stove and add the almonds. Soak 1 to 2 minutes or until skins easily come off when pressed between your fingers.

Step 4. Placed the placed almonds on one or more baking sheets.

Step 5. Heat your oven to 325°F (160°C) and place trays of almonds in the oven for 15-20 minutes until completely dried and lightly toasted. Every 4 to 5 minutes, stir the almonds and shake baking sheet to evenly distribute and promote even drying and toasting.

Step 6. Cool completely and store in an air tight container or freeze.
